This is a very special Parmigiano from one of the great family producers. They’ve been making their superb cheese since 1941. We are very particular about the milk they use, we visit them 4 times a year to select wheels from the spring and fall milk when the flavor is at its peak and its qualities are best for making longer aged Parmigiano. The wheels are then aged for at least 30 months in which time all the amazing qualities of this king of cheeses develop: layers of bright fruit(apples, pineapple, pear, strawberry), roasted hazelnuts, buttery toasted brioche, and an underlaying savory umami! Don't confuse this with parmesan, this is the real deal flavor bomb king of cheeses! Hand cut fresh off the wheel daily!
