Professional bakers prefer these heavy duty tin springform pans over the dark non-stick pans as the dark pans tend to bake cakes too quickly at the outer edges. Plus, these pans can be tossed in the dishwasher! The non-stick pans should never be run through the dishwasher as the heat destroys the coating, as does scrubbing, and of course, no risk of that non-stick coating material leaching into your baked goods.

For a smooth release, simply spray the collar of the pan with a baking release spray or even good old vegetable oil cooking spray.
